Using a smoke drying method, radishes are hung in hearths to dry while oak or cherry wood is burned.
After, they are fermented and aged in barrels with rice bran, salt, and pomelo.

Can’t stop eating these crackers. They have the slightest hint of wasabi that makes them very tasty and not over the top with heat!
